A favorite of mine for many years! Keeps a long time.

Recipe Ingredients for Health Fruit Cake

3 cups walnuts
2 cups dried apricots
2 cups dried dates
3/4 cup whole wheat flour
1/2 cup wheat germ
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon baking powder
3 eggs
1/4 cup honey
1 teaspoon vanilla

Recipe Directions for Health Fruit Cake

Put nuts and fruits in large bowl. Mix together dry ingredients and pour over fruit. Mix well. In a separate dish, slightly beat the eggs, add honey and vanilla. Pour over fruit and nuts and mix. Bake in lined loaf pan in slow oven (about 300 degrees) for an hour or more.
