Mom's recipe - I don't know who Hazel is!

Recipe Ingredients for Hazels potatoes

1 lb frozen hash browns (cubes)
12 ounces kraft velveeta cheese
1 1/2 cups cottage cheese
1 pint half and half
1/2 cup margarine
1 medium onion, chopped

Recipe Directions for Hazels potatoes

  1. Pour the hash browns into a 9 X 13 pan (spray pan with cooking spray)

  2. In medium sauce pan, melt the following over low heat stiring frequently: half and half, margarine, onion, and Velveeta.

  3. Remove from heat. Stir in cottage cheese.

  4. Pour mixture over potatoes. Stir briefly.

  5. Refrigerate for at least 1 hour (best if over night).

  6. Bake at 350 for 1 hour. Let sit 10-15 minutes after baking so the sauce will thicken.
