Recipe Ingredients for Hazelnut Quinoa Salad

1/2 c. quinoa
1/4 c. olive oil
1/4 c. red wine vinegar
1 tsp. oregano
1 tsp. basil
1/4 tsp. salt
1/2 c. hazelnuts, toasted, skin removed, coarsely chopped, divided
1 1/2 c. cucumber, peeled, seeded and diced
1 c. cherry tomatoes, cut in half
1 c. peas, petite, thawed and drained
3/4 c. yellow bell pepper, seeded and diced
1/4 tsp. black pepper

Recipe Directions for Hazelnut Quinoa Salad

  1. Rinse quinoa under running water for 1 minute. Place quinoa and 2 c. water in medium saucepan. Bring to boil over high heat. Cover and reduce heat to low. Simmer for 15 to 20 minutes or until all water is absorbed. Fluff with fork. Cool completely.

  2. Process vinegar & oil & herbs and 1/4 c. hazelnuts on food processor or blender until smooth; set aside.

  3. Place cooked, cooled quinoa in large bowl. Add cucumbers, tomatoes, peas and bell pepper. Pour dressing over salad and toss until blended. Sprinkle with black pepper and remaining hazelnuts. Serve immediately.
