Hawaiian Sweet Potatoes: serving size 1 cup

Recipe Ingredients for Hawaiian Sweet Potatoes

29 oz canned Sweet Potatoes Cut In Light Syrup
1/4 cup country crock light
8 oz crushed pineapple
1/4 cup packed brown sugar
2 medium bananas

Recipe Directions for Hawaiian Sweet Potatoes

  1. Drain sweet poatoes, reserving 1/4 cup liquid. Cut sweet potatoes into chunks

  2. In large skillet, melt butter over medium heat. Add sweet potatoes; cook and stir 1 minute. Add the reserved 1/4 cup liquid, the crushed pineapple, and brown sugar to skillet, stirring to combine.

  3. Bring mixture to a boil; reduce heat. Simmer for 4 - 5 minutes until liquid thickens slightly. Add banana slices; heat through.
