Low fat chicken and stuffing recipe with pineapple.

Recipe Ingredients for Hawaiian Stuffed Chicken

2 boneless, skinless chicken breast (cut in half)
2/3 cup hot water
1 box (6 oz) Stove Top Stuffing mix, dry
1 medium green bell pepper, seeded and chopped
8 oz crushed pineapple, undrained
2 tablespoons brown sugar
2 tablespoons vinegar
1/4 teaspoon ground ginger

Recipe Directions for Hawaiian Stuffed Chicken

  1. Preheat the oven to 400 degrees. Lay the chicken breasts on a flat surface and pound with a rolling pin or meal mallet to 1/4 inch thickness.

  2. Mix the hot water, stuffing mix, green pepper and half the pineapple and juice.

  3. Spoon the stuffing mix evenly over the chicken. Roll up tightly starting with the long end. Secure with toothpicks if desired. Place seam side down in a square baking dish that has been coated with cooking spray. Place any leftover stuffing around the chicken in the dish.

  4. Mix the remaining pineapple and juice, brown sugar, vinegar, and ginger. Spoon evenly over the chicken.

  5. Bake uncovered, without turning, for 30-40 minutes, or until tender.
