From Donna-Marie Pye's "300 Slow Cooker Favourites". Serve this with a tropical fruit plate and fragrant rice (such as jasmine rice). Use bright orange sweet potatoes in this recipe. They are sweeter, moister and more colourful than the pale yellow sweet potatoes.

Recipe Ingredients for Hawaiian Pork Stew

3 tbsp all-purpose flour
1 tsp salt
1 tsp freshly ground black pepper
1/2 tsp ground cinnamon
1/4 tsp dried oregano
1/4 tsp ground cloves
2 lbs pork
2 tbsp vegetable oil
1 cup chicken stock
1 large onion, chopped
2 cloves garlic, minced
540 ml diced tomatoes, with juices
1 large sweet potato, peeled and cubed
1 tbsp brown sugar
1 cup pineapple chunks
1/2 green bell pepper, chopped
1/4 cup chopped fresh parsley

Recipe Directions for Hawaiian Pork Stew

  1. In a heavy plastic bag, combine flour, salt, pepper, cinnamon, oregano and cloves. In batches, add pork to flour mixture and toss to coat.

  2. In a large nonstick skillet, heat half the oil over medium-high heat. Cook pork in batches, adding more oil as needed, until browned all over. With a slotted spoon, transfer pork to slow cooker stoneware.

  3. Add stock to skillet and bring to a boil, stirring to scrape up any browned bits from bottom of pan. Transfer to slow cooker. Add onion, garlic, tomatoes, sweet potato and brown sugar; stir to combine.

  4. Cover and cook on Low for 8 to 10 hours or on High for 4 to 6 hours, until meat and potatoes are tender and stew is bubbling.

  5. Stir in pineapple chunks, olives, green pepper and parsley. Cover and cook on High for 15 to 20 minutes longer, or until heated through.
