Great alone, on bread - easily doubled

Recipe Ingredients for Hawaiian Chicken Salad

2 1/2 c chicken breast, cooked & cubed
8 oz pineapple, chunks & drained
4 oz. water chestnuts, sliced & drained
1/2 c green pepper, julienned
1/2 c grapes (red and/or green)
1/2 c cheddar cheese, shredded
1/3 c cashews
1/3 c celery, chopped
1/4 c green onions, chopped
1/3 c mayonaise
1/3 c yogurt, plain fat-free
2 t apple juice
1/8 t salt

Recipe Directions for Hawaiian Chicken Salad

Combine all ingredients; mix well. Refrigerate 4 hours.
