Recipe Ingredients for Hatch Bread

4 1/2 cups water
4 1/2 cups soymilk
1 cup honey
1 cup canola oil
2 tbsp salt
5 tbsp yeast
15 cups whole wheat flour
5 cups white flour

Recipe Directions for Hatch Bread

  1. Blend above ingredients well with a mixer/beater.

  2. Stir in by hand 5 c. white flour and an additional 5 c. whole wheat flour.

  3. Then stir in equal parts white and wheat flour until the dough is stiff enough to knead.

  4. Put flour on kneading surface and keep well floured in the kneading process so the dough won?t stick to you hands or the kneading surface.

  5. Knead for 10 minutes.

  6. Let raise for about 1 to 1.5 hours. (till doubles in bulk)

  7. Punch down and divide into 7 loaves.

  8. Let raise until about 2-3 inches above pans, almost as high as you want the finished product. (Bread will raise a little more in the cooking process but not as much as 100% white bread does.)

  9. Takes anywhere from 30 min to 45 min to raise in the pans depending on how cold or warm the dough is.

  10. Preheat over to 400. Turn down to 350 when you put the bread in.

  11. Rotate the loaves after 10 min cooking time. This is to prevent large cracks on the sides of loaves due to uneven heat.

  12. Bake 15 more min then rotate again.

  13. Bake 10 more min.

  14. Total baking time: 35 min

  15. When finished baking, remove loaves from pans and put on sides on a clean cloth to cool.

  16. Cover with a clean cloth as they are cooling.

  17. Bread must be absolutely cool before freezing. Otherwise, moisture condenses onto the loaf, making it wrinkle.
