Also known as Indian pudding, this recipe is inspired by the dish commonly eaten by folks in England, as well as settlers of the new world.

Recipe Ingredients for Hasty Pudding

6 cups Silk soymilk
1/2 cup Earth Balance butter
1/2 cup cornmeal
1/4 cup flour
1 tsp salt
1/2 cup maple syrup
4 1/2 tsp Ener-G egg replacer
6 tbsp water
1/3 cup sugar
1 tsp cinnamon
1 tsp nutmeg
8 cups vanilla Almond Dream ice cream

Recipe Directions for Hasty Pudding

  1. Preheat oven to 250 F.

  2. Heat milk and butter to a boil in large pot. Reduce heat to medium.

  3. In large bowl, mix cornmeal, flour, and salt. Stir in maple syrup. Slowly thin the mixture by adding 1/2 cup of the milk and butter mixture, a few tablespoons at a time. Gradually add that mixture back to the large pot of milk and butter. Cook, stirring until thickened.

  4. Mix Ener-G egg replacer and water thoroughly. Add into the hot milk and cornmeal mixture; stir to combine. Add sugar and spices, stirring until smooth. If the mixture is clumpy, blend it to smooth it out.

  5. Pour into 2 1/2 qt shallow casserole dish. Bake for 2 hours at 250 F.

  6. Allow pudding to cool about an hour. If it is chilled, reheat it until warm. Serve topped with vanilla ice cream.
