My lower calorie alternative to my family's hashbrown casserole.

Recipe Ingredients for Hashbrown Casserole (lighter alternative)

32 oz. potatoes
1 can cream of celery soup
1 cup of fat free sour cream
4 oz. cheese, ff shredded cheddar
1 tbsp chopped green onion
1/4 tsp pepper
1/2 tsp salt

Recipe Directions for Hashbrown Casserole (lighter alternative)

  1. Preheat oven to 350.

  2. Cut potatoes into 1/2 inch pieces. Boil for 5 minutes, drain. (This step is not needed if using frozen hashbrowns)

  3. Combine all ingredient in casserole dish.

  4. Bake for 45 to 60 minutes (until top starts to bubble).

  5. **Alternatives include, 1 bag of hasbrowns, cream of chicken or mushroom soup, 8 oz. cheese and non-ff items.
