Just potatoes, onion and olive oil

Recipe Ingredients for Hash Brown Frittata

1 1/2 pounds small potatoes
1 medium onion
1 tbsp olive oil
1 tsp olive oil

Recipe Directions for Hash Brown Frittata

  1. Finely chop the onion

  2. Shred the potatoes in a food processor

  3. Mix potatoes and chopped onion in large bowl

  4. Heat 1 tbsp oil in 10" cast iron skillet. Spray 1/2 tsp oil around perimeter to make it easy to turn

  5. Add potato mixture evenly on skillet. Lightly tamp down to flatten

  6. Fry covered on low setting 10 minutes

  7. Uncover scrape the perimeter of the skillet with a metal spatula. Slide the spatula beneath the frittata in several places to loosen it from the skillet. Place a 9" plate over the potatoes and carefully flip the frittata onto the plate.

  8. Spray remaining 1/2 tsp oil on skillet. Slide the frittata back on the skillet and fry covered on low for an additional 10 minutes.

  9. Uncover and allow steam to escape till the appropriate crispiness is reached.

  10. Remove as above and serve immediately.
