This is a "comfort-food" in our family. We love this as a side dish. It is also great to take to potluck dinners. Almost everyone seems to like this casserole. I usually "skinny" this recipe up using low-fat and low-calorie ingredients. Still tastes great!

Recipe Ingredients for Hash Brown Casserole

2 pounds frozen hash browns
1/2 c butter, melted
1 can of cream of chicken soup
1 pint sour cream
1/2 c onion, finely chopped
2 c cheddar cheese, grated
1 tsp salt
1/2 tsp pepper
2 c cornflakes, crushed
1/4 c butter, melted

Recipe Directions for Hash Brown Casserole

  1. Defrost the hash browns.

  2. Combine the first 7 ingredients and mix with the hash browns.

  3. Put it in a 3 quart casserole dish.

  4. Saute the cornflakes in butter and sprinkle on top.

  5. Cover and bake at 350 degrees for about 40 minutes.
