Also requires 1 cup 98% fat free cream of mushroom soup per serving (just under 1 can for 2 servings), adds 50 cal/serving.

Recipe Ingredients for Hash Brown Casserole

4 medium slices bacon
1 onion, chopped
4 cloves garlic, minced
8 oz frozen hash browns
2 oz 50% light cheddar
1/2 cup fat free sour cream

Recipe Directions for Hash Brown Casserole

  1. Pan fry bacon until crispy.

  2. Pour out any remaining fat and sautee garlic and onions until soft.

  3. Add the homefries to the pan and cook for 5 minutes until soft and not frozen.

  4. Mix cream of mushroom soup (1 cup for 2 servings), cheddar and sour cream together.

  5. Stir in crumbled bacon, onions and garlic and home fries.

  6. Bake 30 minutes at 350.
