Not very healthy and takes a while to prepare but very elegant. I serve it for company of special occasions.

Recipe Ingredients for Hasenpfeffer (rabbit stew)

32 oz Rabbit
0.33 cup Whole Wheat Flour
6 oz Pork, Cured, Bacon
0.5 cup, chopped Onions, Spring Or Scallions
1 clove Garlic
6 oz Wine, Table, Red
1 cup Soup, chicken broth, canned, less/reduced sodium
1 tbsp Concord Grape Jelly
1 tsp Peppercorns
0.6 grams Bay Leaf
1/4 tsp Rosemary
0.125 tsp Thyme

Recipe Directions for Hasenpfeffer (rabbit stew)

  1. Place 1/2 pkg bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain on paper towels and set aside.

  2. Coat 3 lb. rabbit, cut up, with 1/3 cup less two tbsp flour, shaking off excess. Brown rabbit in remaining bacon fat. Remove from skillet, along with all but 2 tbsp of the fat, and reserve.

  3. Saute 1/2 cup finely chopped shallots and 1 clove minced garlic in skillet for about 4 minutes, until tender.

  4. Stir in 1 cup dry red wine, 1 cup low fat, low sodium chicken broth. Heat to boiling, then stir in 1 Tbsp. currant jelly (I use grape), 10 crushed peppercorns, 1 bay leaf, 1/4 teaspoon dried crushed rosemary, and 1/8 tsp. crushed dried thyme.

  5. Return rabbit and crumbled bacon to skillet. Heat to boiling, then reduce heat to low. Cover and let simmer for about 1 1/2 hours or until rabbit is tender. I put mine in the oven at 200 for at least 2 hours. The longer the better, up to 4 hours.

  6. Remove bay leaf and discard. Place rabbit on a warm platter and keep warm while preparing gravy.

  7. To make gravy: stir 2 Tbsp lemon juice into skillet with cooking liquid. Combine 3 Tbsp. water with 2 Tbsp flour and mix together; stir mixture into skillet over low heat. Simmer and stir constantly until thickened.

  8. Serve rabbit with rice or potatoes and gravy on the side.
