Recipe Ingredients for Harvest vegetable soup

300 g parsnips
300 g carrots
300 g courgettes
300 g celery
200 g sweetcorn
100 g lean bacon
1 chopped onion
2 stock cubes
3 cloves garlic
6 cups water

Recipe Directions for Harvest vegetable soup

cook onion, garlic and bacon together in microwave, then add water, stock cubes and diced vegetables. Simmer till tender, then remove about half of them. Buzz pan contents with stick blender, then return the vegetables to the pan. Season to taste.
