Found recipe at recipezaar.com but modified it to be vegan. Delicious and fruity, served at Thanksgiving this year to rave reviews.

Recipe Ingredients for Harvest Stuffing

2 tbsp olive oil
2 tbsp garlic, minced
2 cups onions, diced
2 cups celery, chopped
2 cups vegetable broth
12 cups plain croutons
2 granny smith apples, chopped
1/2 cup dried cranberries
1/2 cup dried apricots
2 tbsp thyme
1 tbsp sage
1 tbsp rosemary
1/4 cup parsley, minced

Recipe Directions for Harvest Stuffing

  1. 1. Heat oil in pan and saute onions, celery, garlic, thyme, and sage for about 10 minutes.

  2. 2. Add bread, apples, and dried fruit.

  3. 3. Toss well.

  4. 4. Drizzle broth over the mixture to moisten and season with salt and pepper.

  5. 5. Put into a crock pot. Cook on low for 2 hours, stirring 1x per hour.

  6. 6. Lower heat to "warm" setting until ready to serve.
