Recipe Ingredients for Harvest Salad

1 cup, shredded or chopped Lettuce, Butterhead
2 cups Mixed Baby Greens
0.25 ear, large (7-3/4" to 9" long) yields Corn, Sweet, White
0.06 cup Pumpkin And Squash Seeds, Whole, Roasted
0.13 cup Dried Cranberries
0.33 cup Roasted Butternut Squash
0.25 Serving Potatoes
1 oz Roasted Peppers
1.5 tbsp Vinaigrette Balsamic

Recipe Directions for Harvest Salad

Roast the squash, potatoes and peppers separately. Steam the corn and cut off the kernels. Roast the seeds over low dry heat 2-3 minutes. Assemble and enjoy!
