Recipe Ingredients for Harvest Rice Dish

1/2 c almonds, slivered
2 c chicken broth
1/2 c uncooked brown rice
1/2 c uncooked wild rice
1 T butter
3 onions
1 T brown sugar
1 c dried cranberries
2/3 c sliced mushrooms
1/2 t orange zest

Recipe Directions for Harvest Rice Dish

  1. Toast almonds at 350 degrees for 5-8 min.

  2. Mix broth, brown and wild rice in saucepan. Bring to boil. Reduce heat to low, cover and simmer 45 min.

  3. In med skillet, melt butter over med-high heat, add onions and brown sugar. Saute, reduce heat and cook onions 20-25 min until carmelized.

  4. Stir cranberries and mushrooms into skillet, cover, cook 10 min. Stir in almonds, orange zest. Fold mixture into rice.
