Makes 4 servings



You can use any vegetable other than carrots or do a mixture. Just as long as there is 2 cups.

Recipe Ingredients for Harvest Pie

4 cups sweet potatoes, peeled and cubed(4 sweet potatoes)
1 beef bouillon cube
1 1/2 cups water
1 tsp cornstarch
2 cups carrots, peeled and chopped
1 tsp thyme

Recipe Directions for Harvest Pie

  1. Cook potatoes until tender.

  2. Just before cooking take a cupful of potato liquid.

  3. Mash potatoes, using the potato liquid until you have the desired consistency.

  4. Preheat oven to 375.

  5. Boil water with beef bouillon cube and cornstarch until it is like gravy.

  6. Put chopped carrots in a round baking dish.

  7. Pour gravy mixture over top of carrots.

  8. Then spread
