You can substitute milk or soy creamer for the cream, brown sugar for the white sugar and egg replacer for the eggs. you could try applesauce for some of the margarine and you can use raisins instead of choc. chips.

Recipe Ingredients for Harvest Loaf Cake

1 3/4 cup all-purpose flour
1 tsp baking soda
1 1/2 tsp salt
3/4 tsp nutmeg, ground
1/2 tsp ground ginger
1/2 tsp ground cloves
1/2 cup Original Organic Whipped butter spread,Earth Balance
1 cup sugar
2 eggs
3/4 cup canned pumpkin
3/4 cup semisweet chocolate chips
3/4 cup chopped walnuts

For glaze:
1/4 cup powdered sugar
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
2 tbsp cream

Recipe Directions for Harvest Loaf Cake

  1. Preheat oven to 350 degrees. Grease and flour a 9x5 loaf pan. In a medium bowl, mix flour, soda, salt, 3/4 tsp nutmeg, ginger and cloves. Set aside

  2. In a lg bowl, cream butter and sugar until light and fluffy. Beat in the eggs. Add flour mixture alternately with pumpkin. Stir in chocolate chips and 1/2 cup of the walnuts. Pour batter into loaf pan. Sprinkle remaining nuts on top.

  3. Bake at 350 deg. for 65-70 minutes or until toothpick comes out clean. while still warm, drizzle with glaze. Cool for 6 hrs before serving.

  4. To make the glaze: In a medium bowl, combine confectioners sugar, nutmeg and cinnamon. Mix and add 1-2 tsp cream or milk until drizzling consistency.
