Simmered harvest vegetables in curry sauce.

Recipe Ingredients for Harvest Gurried Vegetables

1 cup low sodium vegetable broth
1 1/2 cup cauliflower
1 1/2 cup zucchini
2 cups eggplant
1/4 cup mango chutney
2 tbsp curry paste
2 tbsp ginger
4 cups fresh tomatoes
1 large onion diced
1 tbsp olive oil

Recipe Directions for Harvest Gurried Vegetables

pour the oil in a deep saucepan. put in large onion diced into oil and fry on medium till soft and transparent. Add in the 4 large tomatoes chopped into the pan. Let cook for about 5 minutes. Add in the curry paste, ginger and mango chutney. Add in eggplant (about 1 small eggplant) and zucchini. Leave skins on both. Cut zucchini length wise then in half. Cut eggplant in to bit size strips. Add in vegetable broth. Let cook covered for approx 5 minutes. Now add in the cauliflower and let simmer till cauliflower is soft (about 20-25 minutes). Serve on Basmati Rice.
