Whole grain pancakes; knock-off of IHOP recipe.

Recipe Ingredients for Harvest Grain Pancakes

3/4 cup oats
3/4 cup whole wheat flour
1/3 cup all purpose flour
2 tsp baking soda
1 tsp baking powder
1 1/4 cups buttermilk
1/3 cup whole milk
1/4 cup vegetable oil
2 eggs
1/4 cup granulated sugar
3 tbsp finely chopped blanched almonds
3 tbsp finely chopped walnuts

Recipe Directions for Harvest Grain Pancakes

  1. Grind oats in blender until fine, like flour.

  2. Mix dry ingredients in medium bowl.

  3. Mix buttermilk, milk, oil, eggs, and granulated sugar, in another bowl, with electric mixer until smooth.

  4. Combine wet and dry ingredients, add nuts and mix well, by hand.

  5. Ladle 1/3 cup batter into hot pan and cook 1 to 3 minutes per side or until brown.
