Easy way to use up leftover veggies, although cauliflower seems to remain the favorite.

Recipe Ingredients for Harvest Chicken Stew

258 g breast, chicken
258 g chicken, dark meat
30 oz diced tomato, canned
15 oz tomatoes, stewed
3 medium zucchini, chopped
1 yellow onion, diced
2 cups mushrooms, sliced
2 head cauliflower, chopped
16 oz peas
4 T Olive Oil
1 T Salt
1 T Pepper
2 tsp thyme

Recipe Directions for Harvest Chicken Stew

  1. Season chicken with salt and pepper and brown in olive oil.

  2. Remove chicken, reduce heat to med/low and add onion.

  3. Saute onion for a couple minutes then add thyme and rest of chopped veggies

  4. place chicken pieces on top of veggies and pour tomatoes on top

  5. reduce to low and let cook for 2 hours or until chicken easily falls off bone (1 hour for firm veggies and more intact chicken)

  6. If stew is desired, remove all bones and skin from chicken and gently mix meat into veggies
