From "Slow Cooker, One-Pot and Casserole." A uniquely-flavored and deliciously warming soup.

Recipe Ingredients for Harira

1 large onion, chopped fine
4 c chicken stock, near boiling
1 t cinnamon
1 t turmeric
1 pinch cayenne pepper
2 carrots, finely diced
1/2 cup celery, finely diced, two stalks
14 oz canned tomatoes, chopped
1 lb potatoes, finely diced
14 oz canned chickpeas
1/4 t saffron
2 T fresh cilantro, chopped
1 T lemon juice
1 t salt
1/2 t pepper

Recipe Directions for Harira

  1. Put chopped onion in crock pot, add 2 1/2 c of stock.

  2. Cook on high with lid on for one hour.

  3. Blend cinnamon, turmeric, ginger and cayenne with 2 T of stock to form a paste. Add to pot with carrots, celery and remaining stock. Cover and cook for another hour.

  4. Add tomatoes, potatoes, chickpeas and saffron. Cook for 4-5 hours; stir in cilantro and lemon juice; adjust seasoning.
