Hard-Cooked Eggs with Caramelized Onions

Recipe Ingredients for Hard-Cooked Eggs with Caramelized Onions

2 large eggs
1 small yellow onion
1/2 teaspoon minced garlic
2 teaspoons minced fresh tarragon
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper

Recipe Directions for Hard-Cooked Eggs with Caramelized Onions

Slice onion and cook in nonstick skillet with 2 tablespoons of canola oil. Cook on medium heat and add garlic once onions turn translucent. Cover eggs in cold water in small pot and bring to a boil. Keep at a rolling boil for 7 minutes. Remove from heat and drain, running eggs under cold water. Peel shells and cut in half. Eggs should have creamy centers. Continue cooking onions and garlic until onions start browning and become thick. Remove from heat and mix in tarragon, salt, and pepper. Top eggs with onion and herbs.
