Recipe Ingredients for Hard Boiled Delight

4 tbsp olive oil
1 green bell pepper, seeded & chopped
1 celery stalk, chopped
1 clove garlic, minced
6 oz mushrooms, sliced
2 tbsp chopped fresh parsley
8 hard-boiled eggs, cooled & shelled
1/4 cup grated parmesan cheese

Recipe Directions for Hard Boiled Delight

  1. preheat oven to 375 degrees F

  2. place 2 tbsp olive oil in a saucepan over medium heat and saute pepper, celery and garlic for 5 mins.

  3. add mushrooms and saute another 5 mins. add remaining 2 tbsp olive oil and bring to a boil, stirring constantly

  4. add parsley and sauteed veggies to complete the sauce.

  5. slice eggs lengthwise. spread a few tablespoons of the sauce over the bottom of an oiled casserole, top with some of the hard-boiled egg slices and sprinkle with sauce. continue to make alternate layers of sauce and egg slices. end with a layer of sauce. top off with thick layer of parmesan cheese.

  6. bake 20 mins. and serve warm.
