When you're on a diet, it can be irritating for the boyfriend. The trick is to make dinners that can satisfy him with a full sized portion, and you can eat a smaller portion with a salad and everyone is happy. This sausagey cheesy garlicy mushroomy casserole will be sure to please.

Recipe Ingredients for Happy Boyfriend Casserole

6 patties Turkey Breakfast Sausage Patties
1/2 cup Cooking Creme
2 cups diced potatoes
2 1/2 cups, diced Mushrooms
1/4 cup minced onion
3/4 cup Spinach
4 serving Trader Joes lite shredded 3 cheese blend

Recipe Directions for Happy Boyfriend Casserole

  1. Brown your sausage patties in a skillet and then break apart into crumbles and set aside in a bowl.

  2. Peel and slice your potatoes (use the small waxy yellow variety) with a V slicer so the slices are very thin. Alternately you can dice them depending on how you want to present your casserole. For a fancier look use the V slicer, for a more "Down Home" style dice them

  3. Slice (or dice) your mushrooms

  4. Break up the spinach into pieces.

  5. Mix the sausage crumbles, mushroom, onion, potatoes, spinach and cooking creme together and pour into a pot.

  6. Cook on stove on low for a few minutes until things begin to soften up

  7. Pour into a 9x13 baking dish

  8. Sprinkle the cheese on top

  9. Bake in oven at 375 for 35-40 minutes turning on the broiler for the last 5 minutes until the top cheese is slightly browned

  10. Portion size is one cup.
