Purim cookies w/ poppy seed & w/ apricot jam

Recipe Ingredients for Hamentashen

1 1/2 c butter
2 large eggs
1 cup sugar
1 1/2 tsp vanilla extract
3 tsp 2% milk
3 1/2 c flour
1 1/4 c poppy seeds
1/2 c milk or soymilk or water
1/2 c honey
1 2/5 tbsp butter
2 tsp lemon juice
1/2 tsp vanilla
13 oz apricot jam

Recipe Directions for Hamentashen

  1. follow sugar cookie recipe for dough

  2. Poppy seed filling:

  3. in a coffee grinder or similar appliance, grind the poppy seeds to a powder. transfer to a bowl. they MUST be ground

  4. in a small pot, place the rest of the ingredients along with the poppy seeds and cook on medium heat for about 10 minutes until thickened.

  5. place in a bowl and let cool.
