Recipe Ingredients for Hamburgers with Tomatoes and Zucchini

15 g (1 Tbl) extra virgin olive oil , roast garlic flavor
5 oz zucchini, sliced thin
2 1/2 oz onions, chopped
425 g (5 patties) hamburgers
1/3 cup fat free chicken broth, divided
1/8 tsp salt
1/8 tsp pepper
14 1/2 oz stewed tomatoes , chopped

Recipe Directions for Hamburgers with Tomatoes and Zucchini

  1. In large skillet, heat olive oil, add onions and zucchini and cook until onions are translucent and zucchini are tender. Remove from skillet and set aside.

  2. Add hamburger patties and half the chicken broth. Cook patties until browned through. Season with salt and pepper

  3. Remove patties, empty and thoroughly rinse skillet. Return patties to skillet with onions, zucchini, stewed tomatoes and remainder of chicken broth. Bring to boil, then simmer until heated through, about 5 minutes.

  4. Divide and serve.

  5. NOTE: For extra zip, add 1 slice of mozzarella cheese to each patty and let melt. This will add 80 calories per serving.
