Hamburger & Zucchini Casserole

Recipe Ingredients for Hamburger & Zucchini Casserole

2 tbsp butter
1 med onion, finely chopped
2 cloves garlic, minced
4 oz mushroom pieces
1 lb hamburger
1/2 tsp salt
1/2 tsp pepper
4 zucchini, medium
6 clices cheddar cheese, slice
1 can cream of mushroom soup
1 c cracker crumbs

Recipe Directions for Hamburger & Zucchini Casserole

  1. In skillet, melt butter and saute finely chopped onion until transparent.

  2. Add hamburger, salt and pepper and brown meat.

  3. In a pot of water with 1 tsp salt, put whole zucchini and bring to a boil. Boil 5 minutes. Remove and cut into 1/4 inch slices.

  4. In a 2 qt casserole, layer meat, zucchini & cheese using half of each ingredient, then repeat layers.

  5. Pour soup from can on top and spread to cover.

  6. Sprinkle with cracker crumbs

  7. Bake at 350 degrees for 1 hour.
