This is so good on a cold fall day! A great way to use up all those leftovers in the fridge! The meat is cooked and as much fat as possible drained off before adding in.

Recipe Ingredients for Hamburger, Sausage & Vegetable Barley Soup - YUM!

3 cups vegetable broth
1/2 leek
8 oz ground beef, lean
4 oz ground pork, lean
3 oz smoked sausage, thinly sliced
1/4 c corn
1/4 c peas
2 stalks celery
1/2 cup uncooked barley
1/2 medium onion
1 yellow squash

Recipe Directions for Hamburger, Sausage & Vegetable Barley Soup - YUM!

  1. Brown ground meat and drain on paper towels. Pat off as much fat as possible.

  2. If veggies are already cooked, add all at once with meat and barley and heat until barley is done (about 10 minutes). Adjust if you are using raw veggies.

  3. Add salt, pepper and hot sauce to taste.
