Switched up another ccr's recipe into a main dish,with some veggies I have on hand.

Recipe Ingredients for Ham & Veggie Lasagna

300 grams lasagna
2 eggs, beaten
2 cups 1% cottage cheese
3 oz. cream cheese
2 tsp dried Italian seasoning
1 cup onion, chopped
4 cloves garlic, minced
2 tbsp olive oil
2 tbsp flour
1 tsp black pepper
2 cups milk
1 cup water
2 cups spinach,chopped
1 1/2 cup cauliflower, diced
1 1/2 cup zuchinni, shredded
1 1/4 cup carrot, shredded
1 1/2 cups tomato, diced
1 cup Parmesan cheese
8 ounces mozzarella cheese
2 cups ham,chopped

Recipe Directions for Ham & Veggie Lasagna

  1. 1.Cook lasagna noodles according to package directions. Drain; set aside.

  2. 2.In a bowl, combine eggs, cottage cheese, and Italian seasoning. Set aside.

  3. 3.In a large skillet, cook the onion,garlic, & carrots in hot oil until tender. Stir in flour and pepper; add milk all at once.Then add cream cheese. Cook and stir until slightly thickened and bubbly. Remove from heat. Stir in the spinach, cauliflower,zuchinni,tomatoes, and 1/2 cup of the Parmesan cheese.

  4. 4.To assemble, in a greased 3-quart rectangular baking dish, layer one-third of the noodles, folding or cutting to fit, if necessary. Spread with 1/3 of the cottage cheese mixture, then 1/3 of the vegetable mixture,then 1/3 of the ham. Sprinkle with 1/3 of the mozzarella. Repeat the layers twice. Sprinkle with the remaining 1/2 cup Parmesan cheese.

  5. 5.Bake, uncovered, in a 350 degree oven for 35 minutes or until heated through. Let stand for 10 minutes before serving.
