Quick and easy meal or side dish what ever you prefer. Also great with a small amount of low fat cheese baked in.

Recipe Ingredients for Ham and Spinach Fritatta

6 eggs
1 onion chopped
1 cup of diced ham
2 cups fresh baby spinach
1/2 tsp paprika
1 salt (to taste)
1 pepper (to taste)

Recipe Directions for Ham and Spinach Fritatta

  1. Preheat oven to 425.

  2. Sautee onions and diced ham in an oven safe skillet until onions are lucid.

  3. Beat eggs in a large bowl. Add paprika, salt, and pepper. Add ripped spinach,ham, and onions. Mix together and add ingredients back into oven safe skillet.

  4. Using a spatula move raw eggs on the bottom around to create a crusty outer layer of egg 3-5 mins.

  5. Placed entire skillet in oven for 15-20 mins or until eggs are set.

  6. Remove from oven and let sit for 10 minutes before serving.
