A great comfort food and a good way to use up leftover ham.

Recipe Ingredients for Ham, Scalloped Potato Casserole

4 cups potatoes, sliced
2 cups cooked ham, chopped
1 cup onion, sliced
2 tbsp flour
1 tsp parsley, diced
1 tsp chives, diced
1/8 tsp pepper
2 tbsp butter, diced
1 1/2 cups milk, scalded
1/8 tsp paprika, for sprinkling
1/8 tsp parsley, for sprinkling

Recipe Directions for Ham, Scalloped Potato Casserole

  1. Grease a 2 qt covered casserole dish.

  2. Parboil potato slices for medium heat in unsalted water for 5 minutes. Strain and rinse briefly under cold water to stop cooking process.

  3. In a small bowl, blend together flour, parsley, chives, sale and pepper. Whisk in milk. Strain potatoes.

  4. In the greased casserole dish, create multiple layers of potatoes, onion slices, ham and sprinkling of the dry ingredients in each layer.

  5. Dot each layer with some butter, reserving enough potatoes and butter for the top layer.

  6. Pour milk mixture over the top. Sprinkle with paprika and parsley.

  7. Cover casserole and bake in 375 degree oven for 45 minutes covered, the 15 minutes uncovered.
