This is a low calorie soup that is easy to make and tasty. Makes approx. 6, 1c. servings. The water and bullion can be replaced with low sodium chicken broth for a low sodium option.

Recipe Ingredients for Ham and Rice Vegetable Soup

1 onion
1 carrot (7-1/2") Carrots
1 stalk, large (11"-12" long) Celery
14 oz. frozen broccoli
7 oz kentucky special reserve ham
1 cup Rice, White, Long-grain, Regular, Cooked
1/2 teaspoon Thyme
1 serving wyler
3 cup (8 fl oz) Water

Recipe Directions for Ham and Rice Vegetable Soup

Dice all vegetables and ham. Place carrot, onion and celery in pot with 1c. of water. Boil hard until onions are translucent. Add the rest of the ingredients except rice. (More water may be needed.) Boil until veggies are soft. Add cooked rice. allow soup to return to a simmer. Serve.
