Recipe Ingredients for Ham and Potato Chowder

1 tablespoon olive oil
2 onions, chopped
2 tablespoons all-purpose flour
4 cups chicken broth (low sodium)
1 cup water
1 chicken bouillon cube
4 large potatoes, peeled and cubed
1 teaspoon dried marjoram
1 teaspoon mustard powder
1/4 teaspoon curry powder
1/4 teaspoon celery seeds
1/4 teaspoon freshly ground black pepper
1 tsp sea salt
1 2/3 cups milk
2.26 servings cooked ham (1/2 lb Schneiders fat free), cut into 3/4" pieces
6 scallions, sliced

Recipe Directions for Ham and Potato Chowder

  1. Heat the oil in a large saucepan. Add the onions and cook, stirring occasionally, for 5 minutes, or until translucent.

  2. Stir in the flour and cook for 1 minute.

  3. Gradually stir in the broth until well blended. Add the water, bouillon cube, potatoes, marjoram, mustard, curry, celery seeds, and pepper. Bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes, or until the potatoes are tender.

  4. Puree with an immersion blender.

  5. Stir in the milk, ham, salt, and scallions. Gently simmer, stirring occasionally, for 5 minutes.
