My take on a spicy, crustless quiche. Slim it down a bit with egg beaters and skim milk.

Recipe Ingredients for Ham and Pepperjack Cups

6 serving Egg, Whole
8 tbsp Cream, Fluid, Heavy Whipping
4 oz Tavern Ham
0.5 cup Fancy Monterey Jack Shredded Cheese
40 grams Shallots

Recipe Directions for Ham and Pepperjack Cups

Mix eggs and cream. Chop ham and scallions and distribute evenly amongst 12 muffin cups. Sprinkle cheese over ham and onions. Pour egg mixture of ham & cheese. Bake at 350 for 30 minutes - shut off oven and let sit for 5 to 10 minutes.
