Using ham bone and split green peas. Excellent for lunch.

Recipe Ingredients for HAM AND PEA SOUP

1 1/2 lbs DRIED GREEN PEAS
1/2 lb HAM BONE
5 oz HAM
1/2 cup DICED RAW POTATOES
1 DICED ONION
1/2 cup CELERY
1/8 tsp THYME
1 pinch BASIL
1 pinch OREGANO
1 SALT AND PEPPER TO TASTE
1 pinch PARSLEY

Recipe Directions for HAM AND PEA SOUP

Soak peas in cold water at least 12 hours. Rinse well and place in large soup pot. Add 14 cups cold water and ham bone. Bring to a boil, skim off foam and add remaining ingredients. Simmer over low heat, covered, for 3 hours. Add salt and pepper to taste. Sprinkle with parsley. Remove Bone and take off meat. Return meat to soup.
