Slow cooked ham and lima bean soup

Recipe Ingredients for Ham and Lima bean soup

1 lb lima beans
64 oz chicken broth
2 onions
2 jalapeno peppers
2 cups carrots
4 cloves garlic
10 oz lean ham
1 cup water

Recipe Directions for Ham and Lima bean soup

  1. soak beans over night

  2. cook beans in 4 cups chicken broth in slow cooker on high for 2-3 hours

  3. add in chopped carrots, onions, garlic, jalapeno peppers, and ham

  4. add 4 cups chicken broth and 1 cup water

  5. cook on high another 3 hours or on low for 5 hours

  6. (optional) add 1 cup instant potato flakes to thicken soup (another 25 calories per serving).
