easy slow cooker soup, very nutritious

Recipe Ingredients for Ham and Lentil Soup

1 onion, large
2 tbls olive oil
2 carrots
2 stalks celery
2 cloves garlic
1 tsp oregano, dried
1 tsp basil, dried
14 1/2 oz diced tomatoes, canned
2 cups lentils, dried
8 cups water
1/2 cup spinach
2 tbls vinegar
2 cups ham, diced

Recipe Directions for Ham and Lentil Soup

chop onion, celery and carrots. saute in hot olive oil until onions are tender. stir in basil, oregano, garlice and 1 bay leaf. cook and stir two minutes. transfer to slow cooker. Rinse lentils and add to slow cooker with water, tomatoes and ham. Cover, cook on low 6-7 hours. when ready to serve, thinly slice spinach and add to soup. Stir in vinegar and season to taste with salt and pepper.
