Ham and Leeks in Cheese Sauce Recipe

Favourite with the children, sauce is nice with baked potatoes if you prepare it without the pasta. If using pasta I use 700 grams of dry weight pasta, which works out at roughly 300 grams per person cooked

Recipe Ingredients for Ham and leeks in cheese sauce

165 grams Leeks, (Bulb And Lower Leaf-portion)
285 grams Gammon
100 grams Margarine, Regular, Unspecified Oils
75 grams Flour
25 fl oz Milk
130 grams Cheddar Cheese
1/4 tsp Nutmeg, Ground
1 dash Pepper, Black

Recipe Directions for Ham and leeks in cheese sauce

  1. Cut the leeks into slices and boil or steam until tender.

  2. Cut the gammon into cubes or strips and gently cook in a wok or large pan.

  3. Whilst these are cooking bring a large pan of water to the boil and add the pasta.

  4. When the gammon is just cooked add the marg to the pan, cook until melted, add the flour and stir until combined. Warm a little of the milk and add to the mixture, once this is blended in slowly add the remainder of the milk. Once all the milk has been added, you should have a smooth thick sauce.

  5. Grate the cheese into the sauce and add a pinch of nutmeg and a shake of pepper. If the sauce appears to thick reserve some of the water from the cooking of the leeks and add to the cheese sauce. Add the leeks to the sauce, followed by the pasta. Mix all ingredients together,
