A take off on the southwestern chicken dish

Recipe Ingredients for Ham & egg quiche

6 oz ham
3 scallions
1 c corn
6 oz egg substitute
1 c 2% milk
1 1/8 c flour
1/4 t salt
1/8 t pepper
2 c broccoli

Recipe Directions for Ham & egg quiche

  1. preheat oven to 400F

  2. nonstick spray a pie pan

  3. precook broccoli for 3 mins in microwave

  4. combine ham, scallions, broccoli and corn and pour into pie pan

  5. whisk together the egg substitute, milk, flour, salt and pepper and pour over the ingredients in the pie pan

  6. bake 30 mins until golden brown.

  7. For another 50 calories per serving, sprinkle shredded cheddar cheese on top and replace in oven until melted and browned.
