Great winter comfort food, very yummy. As with any milk-based soup/chowder, not letting it come to a rolling boil is VERY important. Makes exactly 8 cups as described here, serving size is 1 cup.

Recipe Ingredients for Ham and Corn Chowder

16 oz Lean Ham, 1/4" cubes
16 oz frozen cut corn
1/2 c onion, finely minced
4 slices bacon, pan fried
4 c 1% milk
4 T corn starch

Recipe Directions for Ham and Corn Chowder

  1. Finely mince the bacon slices.

  2. In a large pot, brown the bacon until crisp, remove excess bacon fat.

  3. Turn pot down to low, add finely minced onion, sweat onion down, DO NOT BROWN.

  4. Once the onion has been sweat and is translucent, add the frozen corn and cubed ham.

  5. Mix well and heat the mixture through.

  6. Reserve 1/2 c of the milk, pour the rest into the pot.

  7. Start heating the chowder until it begins to come to a boil, but DO NOT BOIL.

  8. Mix the corn starch with the reserved 1/2 c milk, mix well.

  9. Pour half the corn starch/milk mixture into the pot, stir very well.

  10. Heat the chowder a little more until the edges of the pot JUST start to boil and the soup begins to thicken slightly.

  11. Add the remaining corn starch/milk mixture slowly while stirring.

  12. When the chowder begins to really thicken turn the heat down to low, again, DO NOT LET IT COME TO A ROLLING BOIL.

  13. Stir until the chowder thickens as much as possible. Turn up the heat slightly until the chowder is as thick as it will get WITHOUT BOILING.

  14. Can be served immediately. When reheating, reheat slowly.
