Recipe Ingredients for Ham & Cheese Stuffed Chicken Breasts

1/4 cup mozzarella, part-skim
2 tbs ham, chopped
2 tsp Dijon mustard
1 freshly ground pepper
1 1/2 lbs chicken breasts (4), skinless, boneless
1 egg white
1/2 cup breadcrumbs
2 tsp olive oil, extra virgin

Recipe Directions for Ham & Cheese Stuffed Chicken Breasts

  1. preheat oven to 400 degrees. use baking sheet and lightly coat with cooking spray

  2. mix cheese, ham, mustard and pepper in a small bowl

  3. slit open the breasts horizontally w/o cutting all the way through

  4. stuff the breasts with the cheese mix and close the opening by pressing edges together.

  5. lightly beat egg white with a fork in a med bowl. place breadcrumbs in a shallow dish. dip breasts in egg, then in breadcrumbs.

  6. heat oil in a large skillet over med-high heat and cook breasts until browned on one side (~ 2min). Place chicken breasts, browned side up, on baking sheet. bake unti chicken in no longer pink in center (about 18-20min) or 170 degrees in the center.
