Ham and cheese fritata made with low fat cheese and deli ham

Recipe Ingredients for Ham and cheese fritata

6 eggs
1/4 cup onion
1/2 red pepper, small
1 jalapeno pepper
1/2 baked potato
1 cup cheese, lowfat
1 cup deli ham, chopped

Recipe Directions for Ham and cheese fritata

  1. chop onion, potato, red pepper and jalapeno pepper removing seeds from peppers.

  2. Spray pan with canola spray

  3. Saute veggies until soft

  4. Put chopped ham into veggies and mix

  5. Cook until heated, then pour eggs over entire mixture.

  6. Stir to mix well and cook until eggs are set.

  7. Top with cheese and cover to melt cheese.
