Quick Frittata. Serve warm, room temperature or cold. Can substitute goat cheese with gruyere, or chedder cheese. Can add 4 small red pototoes diced. Can use 8 extra large eggs. Calories and carbs would have to be readjusted.

Recipe Ingredients for Ham, Cheese and Caramalized Onion Frittata

1 cup (61.6g) Egg Substitute
4 Egg Whites
113 1/5 g goat cheese
1 small onion, diced
1 cup diced smoked ham
60 g (Hood)Fat Free Sour Cream
1/4 cup green onion
2 teaspoons olive oil

Recipe Directions for Ham, Cheese and Caramalized Onion Frittata

  1. Preheat oven to 400 degrees F.

  2. In large bowl, whisk eggs, cream, cheese, salt and pepper to taste.

  3. Melt oil in cast iron pan over medium heat. Add onion (and pototoes if using). Cook thoroughly.

  4. Pour egg mixutre over top. Pull edges away from side of pan with spatula so eggs flow to bottom of the man. When frittate is half set, add slightly browned ham.

  5. Transfer pan to heated oven. Bake for 10 minutes until puffed and golden. Shower with grated parmesan if desired and garnish with additional sour cream and green onions or chives.
