Ham and Bean Soup Recipe

My attempt at my mom's post-Easter classic. (We have ham for Easter every year.( This soup also works well if you boil it with the ham bone!.

Recipe Ingredients for Ham and Bean Soup

3 cups ham broth
1 tbsp canola oil
174 grams celery
284 grams onions
1 1/2 lbs yellow potatoes
182 grams baby carrots
373 grams ham
15 oz butter beans
15 oz blackeyed peas
15 oz Great Northern beans
1 tbsp dried rosemary
1 tbsp dried parsley
1 tsp black pepper, coarse ground

Recipe Directions for Ham and Bean Soup

  1. Cut all vegetables into small, soup-sized pieces.

  2. Heat a large soup pot on medium-high heat, and add the canola oil.

  3. Add the celery and onions to the pot when the oil is hot.

  4. Stir and allow these vegetables to sweat and brown slightly.

  5. Add the herbs and pepper.

  6. Add the ham broth and garlic. Bring broth to a boil.

  7. Add remaining vegetables and beans. Stir.

  8. Reduce heat until pot is at a steady simmer.

  9. Let simmer for at least 1 hour.

  10. Ladle into bowls and serve with radishes & hummus.
