Ham and Bean Soup 1 cup servings

Recipe Ingredients for Ham and Bean Soup

1 pound dry navy beans
2 yellow onions
4 medium carrots
4 celery stalks
3 cloves of garlic
2 tablespoons butter
3/4 pound ham
2 cups chicken broth
1 tablespoon tomato paste

Recipe Directions for Ham and Bean Soup

  1. soak beans

  2. rinse

  3. boil with 1.5 pounds ham hocks until soft

  4. saute diced onion, celery ham, and carrot in butter

  5. when soft add tom. paste and garlic + 1/8 tsp red pepper flakes

  6. add beans, water, and ham hocks to veggies in a 8 quart pan

  7. simmer three hours, or until flavors and veggies are to your liking (adding in chicken broth or water as liquid becomes low)

  8. take out ham hocks

  9. add in diced ham, heat until warmed through

  10. serve

  11. can be made ahead of time and refrigerated for up to a week

  12. freezes well for up to three months

  13. may need excess water or broth after sitting
