Recipe Ingredients for Ham, Barley, and Almond Bake

1/2 c slivered almonds
1 T margarine
1 c uncooked barley
1 c chopped carrots
1/2 c onions
1 1/2 c celery
3 cloves garlic
3/4 lb smoked ham
2 tsp dried basil
1 tsp dried oregano
1/4 tsp black pepper
14 oz beef broth
1/2 lb green beans

Recipe Directions for Ham, Barley, and Almond Bake

  1. Preheat oven to 350

  2. Toast almonds

  3. Melt margarine in a large skillet over medium-high heat. Add barley, chopped carrots, onions, celery and garlic; cook and stir 2 minutes or until onions are tender. Remove from ehat. Stir in ham, almonds, dried basil, oregano, and pepper. Pour into prepared dish.

  4. Pour broth into medium saucepan; bring to a boil over high heat. Pour over barley mixture.

  5. Cover tightly with foil and bake 20 minutes. Remove from oven; stir in green beans. Bake, covered, 30 minutes or until barley is gender. Garnish with fresh basil and carrot ribbons, if desired.
