This recipe is great to portion out for taking to work. I use this as a meal in the every 2-3 hours eating routine. It is nice so that I don't have to cook every day.

Recipe Ingredients for Ham & Asparagus Frittata

2 cups chopped asparagus
2 cups chopped mushrooms
2 cups chopped onions
2 cups chopped lean ham
1 cup egg whites
1/2 cup colby jack cheese

Recipe Directions for Ham & Asparagus Frittata

  1. Pre-heat oven to 450 (rake in middle of oven)

  2. Saute everything but the egg whites and cheese in a cast iron pan on medium high heat.

  3. Add the egg whites making sure they are evenly distributed through the pan.

  4. Sprinkle cheese across the top on the mixture.

  5. Place pan in oven and bake for 15-20 minutes.

  6. Remove from oven and allow to set for about 5 minutes.

  7. Slice into 5 portions and package for daily use.
